Serving temperatures For Wine

Serving wine at the correct temperature is critical to enhancing the flavors and your enjoyment of the wine. But what is the correct temperature?

Most red wines are best served at cool room temperature: 62-65 degrees. Light, fruity red wines, like Beaujolais, are better served slightly chilled at about 58-60 degrees. For white wines, serve higher quality whites at about 58-62 degrees. Simpler, inexpensive white wines should be served between 50-55 degrees.

A good rule of thumb to follow is to put your red wine in the refrigerator 10-15 minutes before drinking, and take your white wines out of the refrigerator 10-15 minutes before drinking.

Tips for Wine & Chocolate Pairings

• Full-bodied wines like Meritage, Cabernet Sauvignon and Syrah are excellent with dark chocolate desserts
• Merlot has hints of chocolate flavor in its blend making it a good choice
• Bittersweet chocolate, generally an acquired taste, is balanced by a Cabernet Sauvignon
• A lighter red, such as a Pinot Noir, complements white chocolate or a creme brulee

• White wines, as a rule, are easier to pair with cheese
• The stronger the cheese, the bolder the wine
• Cheese should be served at room temperature to release the best flavor
• Rieslings and Chardonnays match well with many different cheeses
• Bold Cabernets hold their own against aged cheddars and Camemberts

WINE TASTING 101
Wine is much more complex than other beverages. If you just drink wine, gulping it down the way you do soda, you miss a lot of what you paid for. But if you taste wine, you can discover its nuances. Look like a pro when you follow these wine tasting techniques.

1. SIGHT: Look at the color of the wine against a white background (e.g., tablecloth, piece of paper). Notice how dark or pale the wine is and what color it is. Swirl the wine in the glass and notice how it runs down the inside of the glass.

2. SMELL: Swirl the wine in the glass and then immediately smell it. Don’t be shy...stick your nose as far as you can into the glass without actually touching the wine. As you swirl, the aromas in the wine vaporize, and you can smell them. What do you smell in your wine...fresh pears, clove, or maybe tobacco?

3. TASTE: Ahh, finally...what you have been waiting for! Take a medium-size sip. Hold it on your tongue, purse your lips, and draw in air across your tongue, over the wine. Now swish the wine in your mouth. Then swallow it. What flavors did you taste?
